People! Winter is here. Flu shots are not my idea of good health care, so I try to eat well, take my (many) vitamins and minerals, wash my hands often, drink plenty of fluids and keep a smile on my face. Anyone who smiles all the time may look a bit demented, but God and I know what I’m smiling about. There are also a few little extra things I do in the winter to stay healthy, wealthy and wise. Healthy anyway.

Elderberry syrup, also called sambucus, offers significant protection against viral respiratory infections. One teaspoon twice a day in a shot glass with a bit of water seems to work for us as a preventative. We also drink about three cups of green tea a day. Garlic is also helpful during cold and flu season. We drink green tea and eat garlic year around, just because!! Because we like them.

A friend of mine told me today she was waiting for me to include some recipes on my blog. Well, this is not exactly a recipe, but it is a good idea and includes some things that are wintery and good for you.

Last night I had two good sized organic boneless chicken breasts. I cut them into about 6 pieces, put them in a plastic bag and pounded them until they were about ¼th inch thick. I dredged them in flour, then in an egg wash and then in panko. I flash fried them in avocado oil. Were they ever tasty, crispy, and yummy! There were three left and I was wondering what to do with them, when Jay had a great idea. He said, “These look like lunch tomorrow. Why don’t you put each one in a boat dish, top it with a slice of provolone and some red sauce.” Well that boy has a good idea now and then. I covered each dish with foil and heated them in the oven at 400 for about 20 minutes. Served them with some organic pasta and lunch was a great Italian success. Super (or should I say supper) idea, and great use of leftovers. Any day I can get two meals for three people from two chicken breast halves, George Washington is smiling. (On the dollar bill silly) I was just sorry I didn’t save them for dinner, add a salad and consider myself a genius.
