Veggie garden & Freezing

The summer monsoon is finally here and a relief after a very long spring drought. Our garden has suffered for it too! But after just two or three rains, it’s beginning to perk up. The weather has been really crazy this year, so our garden is a bit behind. However, we have had some radishes and “greens.” We mixed mustard, kale and collards then, cooked them with a bit of bacon and onion. (Don’t try to take the country out of this girl) If we have extra greens, I cook them with the onion and bacon, freeze enough for a meal in ziploc bags. This gives us a summer taste in the winter months.

Now I’m looking forward to the green beans and squash. Yes, even zucchini! The over abundance makes us feel like great gardeners. I found a tasty recipe for roasted asparagus casserole. I’ve also made it with zucchini and it is just as good if not gooder. I cook the green beans with some bacon and onion also, then freeze any extra for next winter. The asparagus recipe follows. But first!

Put down that cell phone and grow something to eat. Your kids will be impressed and probably want to help. Helping plant and watching it grow, may encourage them to eat and enjoy more vegetables. Be sure to grow your little garden organically. It’s not only a teaching experience, but doing something together and getting outside for a dose of vitamin D is all good. Zucchini is so easy to grow and cook. Radishes are good for you and something they can eat on the “go.” Just try it!

ROASTED ASPARAGUS: (or Zucchini if you really grew some)

Preheat oven to 350 and melt 2T butter in a 13x9 baking dish. Cut 1# cleaned and trimmed asparagus into 1” pieces and place in prepared dish. Sprinkle 2T each finely chopped celery and onion over top. Slice 2 medium tomatoes and arrange over celery and onion. Sprinkle with ½ t each basil and thyme leaves and 1/4th t pepper. Top with 3T grated Parmesan cheese and bake for 30 min at 350 or until asparagus is fork tender. Yell, “COME AND GET IT.”
