Corn Dog?
Hello to all you Social Distance-ers out there!
You know, this would be a good time to do some “home cooking”. If you’re hunkered down waiting for the Coronavirus to go away, take advantage of this time to get some real nourishment into you and your family. Take-out, go out, delivery of your daily bread is not as good for you as the food you prepare at home.
I say, “make soup”. It is so good for you and will get your immune system up there where you want it. Try making some soup. I gave you my chicken tortilla recipe a while back. I should call it my “Mile-or-more” soup. When you taste it, you’ll yell “WOW” and they’ll hear you for a mile or more. You can freeze some of the cooking you do during this down time and have something to eat when you receive your get out of jail orders.
Just for kicks, I will give you a recipe your kids will love and so will you. They can even help prepare it.
CHEDDAR CORN DOG MUFFINS:
1 Pkg Corn bread muffin mix (8 oz)½ cup shredded cheddar cheese
2/3 cup milk2 Tblspns finely chopped pickled jalapeno
1 lg egg lightly beaten
5 hot dogs, sliced
Preheat oven to 400. Line muffin cups with foil liners or grease 9 nonstick muffin cups. Combine muffin mix, milk & egg. Add hot dogs, cheese, and if desired jalapeno, Fill cups ¾ full. Bake 14 to 18 minutes. Cool 5 min before removing from pan.
